Food trucks project hopes to revitalize downtown area.


Several food trucks opened for business at a busy Colorado Springs intersection Wednesday as part of a project to revitalize the city's downtown area.

Curbside Cuisine, the food truck hub, is located in an abandoned gas station at Platte and Nevada Avenues. Organizers of the project said it is a strategic location.

"What a better place than to take something that was an abandoned gas station, something that was an eyesore and a detriment to downtown and making it a big asset," John Olson said.

Olson hopes the food trucks will increase foot traffic downtown and transform the area. He said they'll stay there until something permanent comes to that location.

The trucks will operate seven days a week from 6:30 a.m to 8:00 p.m. The price for the food sold ranges between $5 and $8.
